Sorry this picture is a little messy. The reality in Kaley’s Kitchen sometimes. Remember ~ A Messy Kitchen is a Happy Kitchen. Well this kitchen was happy on guacamole salsa day! I was making lunch for 3 adults and 4 kids who were anxious to eat. Thanks Jenny for the idea and recipe. She was in charge of the chopping.
2 organic avocados (chopped)
1 container organic cherry tomatoes (chopped)
1/2 organic onion (diced)
1 bunch organic green onion (diced)
1 can organic black beans (optional)
1 can organic corn/ fresh is even better
1 bunch organic cilantro (diced)
1 fresh organic lime (juice)
1/2 Tablespoon garlic powder
1/2 Tablespoon salt
1 teaspoon oregano
Rinse and chop all the ingredients. I added them in this order: tomatoes, onions, green onion, beans, corn, cilantro, guacamole, lime juice. Then add the spices. Mix. And you are done! Great w/ organic non-GMO corn chips.
That is it. Quick side dish. So good!
