Peanut Butter Energy Bars

I found a similar recipe on pinterest and I had to try it.  I used to eat clif bars all throughout my running years in college.  A great pick me up.  Now that we eat NO SOY, clif bars don’t work for me (I think they have some no soy kids ones).  Here is a homemade clif bar recipe that is tasty and healthy.  A great source of energy.


1 1/2 cups quick cooking oats

1/4 cup packed light brown sugar (or applesauce)

1 teaspoon baking powder

1/2 teaspoon sea salt

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/2 cup milk

1 egg, lightly beaten

1 large banana (mashed)

1/4 cup peanut butter

Mix together the quick cooking oats, light brown sugar, baking powder, sea salt and cinnamon.

Add in the vanilla extract, milk and egg. Mix together.

Then add in the mashed banana and peanut butter.

Pour the mixture into a lightly greased baking pan. Bake at 350 degrees for 18-20 minutes.
